Traditional Balsamic Vinegar of Modena P.D.O. Extravecchio is the result of at least 25 years of ageing and is obtained from 100% cooked grape must, matured through slow acetification deriving from natural fermentation and progressive concentration through very long ageing in a series of casks made of different types of wood, without any addition of aromatic substances.
