The ancient Fabbi vinegar cellar is housed in a splendid country residence, an eighteenth-century architectural gem near Collegara (Modena).

To this aristocratic country site, Franco relocated the first family set of barrels dating from the end of the 19th century, inherited from the skilful care of his grandfather Gianbattista.

This precious first set was expanded by Franco’s father, Mr. Bruno, with new, rare and valuable barrels.

Since then, a knowledgeable oral tradition has been handed down in the Fabbi family, of secrets and rituals that make “knowing how to make” traditional balsamic vinegar an actual religion, a passion that, even more than family, is the foundation of strong anthropological and cultural roots.

In fact later, the vinegar cellar experienced the patient management of Franco and his assiduous care, attentive and skilled, was recognised by the prestigious award of the Palio Spilambertese in 1976, a coveted prize that rewards, in a competition of priests and experts, the best traditional balsamic vinegar of the year.

Today the ancient vinegar cellar is run by the fourth generation with more than one thousand barrels, organised according to the strictest rules of tradition.

The precious vineyard, its intelligent location and the absolute perfection of the balsamic vinegar are the distinctive features that give this vinegar cellar its distinctive charm.
